From an old cookbook that kept me well-fed through college, this was supposedly a signature dish at some restaurant by this name. It's easy, cheap and yummy.
In a medium fraying pan, sauté mushrooms in oil until they give up their moisture. Add minced garlic, beef and cook. When almost done, drain excess fat. Add chopped spinach and stir until wilted and blended into meat. Pour eggs over everything, add cheese, and stir until set. salt and pepper to taste.
Serve on toasted kaiser rolls
