Christmas Fruit candy
Cook sugar, corn syrup and coffee cream to soft ball stage, takes about 23 minutes on high or medium heat.
Beat 7 to 8 minutes until mild color changes slightly.
Add vanilla and continur beating.
Then add slowly: Pecans, Brazil nuts, Walnuts, Cherries and Pinapple, misture will be thick andsticky. Pack in loaf pans and chill, after a few hours mixture becomes firm and creamy.
Store for 24 hours and then cut in 0.5 inch lengths.
