This is a quick, easy and delicious dish. It was my favorite as a kid.
Brown beef and drain. In large bowl, combine beef, corn, beans, sauces, onion and one cup of the cheese. Set aside 1 cup of the corn chips. Crush the rest and stir them into the meat mixture. Turn mixture into a casserole dish.
Cover and bake at 375 degrees Fahrenheit for 40 minutes. Remove from oven and soon sour cream on top. Sprinkle with 1/2 cup grated cheese and arrange reserved corn chips around the edge of the dish. Bake uncovered 5 minutes more. Serve with extra sour cream and enchilada sauce on the side.
