A no-fuss christmas pudding that tastes superb. Can be served hot with custard or brandy sauce, or cold with cream and ice cream. Freezes well in airtight container.
Put fruit, dates, water and butter into a large saucepan and simmer for 12 minutes. When the mix starts to boil add port and baking soda. Stir. Allow to cool completely with the lid on.
Once cool, add eggs, plain flour, self raising flour and cinnamon. Combine well.
Place mixture into a well greased and floured pudding cloth (1 square yard of unbleached calico) and tie securely with string.
NOTE Allow at least " between mixture and string to allow for expansion.
Boil for 4 hours
