Easy. Makes great gifts for the holidays
Prepare a simple syrup by combining the first 3 ingredients in a large pan. Bring to a boil,lower heat and simmer for 5 minutes.
Stir coffee thoroughly into the hot simple syrup. Allow to cool to at least room temperature.
Add vodka and vanilla. Again, stir thoroughly. Pour into dark bottles and allow to age at least 1 week in a cool dark place. Kahlua keeps well-- good even a year later--if it lasts that long.
Recipe can be halved. We make several batches each year and give as Christmas/New Years gifts.
