Using 4 basic ingredients, plus a few key flavorings, a really scrumptious dinner is yours in about 40 minutes.
Chop chicken into medium large chunks and set aside. Sauté chopped mushrooms in 1 tablespoon butter and some salt and ground pepper, to taste, on medium high heat in large skillet till beginning to get tender. Set aside on plate, saving juices in skillet.
If desired prepare your favorite couscous (or rice) to go with the dish.
Increase heat to medium high and introduce chicken along with 1 tablespoon butter and some salt and ground pepper to taste. Turn often and sauté till lightly browned. Add mushrooms, hearts of palm and Kalammata olives and wine and reduce heat to medium. After 2 minutes add oregano and continue sautéing till liquid is partially reduced.
Serve over couscous on hot plates.
Use 'pearl' couscous (larger grained). Select a multi color mix to make the dish presentation really pop.
