I served this the other night to company. I didn't know it was going to turn out so superb. Half of it might have been the sheer desire to impress, but I think a lot of it was the fact that I went to the fish shop and got fresh salmon and the green grocers and got fresh veggies. AMAZING!
1. Mix together all the ingredients for the salsa in a bowl and set aside.
2. Heat oil in a skillet over a medium heat and cook the salmon 2 minutes each side or until cooked through. (If your skillet isn't big enough for all the salmon fillets to cook at once - place in the oven on the lowest heat possible while cooking the remainder of the salmon.
3. To serve - place 2 leaves of butter lettuce on each plate. Place a salmon fillet on the lettuce and top with plenty of the salsa.
