A very quick pasta dish ideal for whipping up on a work night.
Heat 1tbsp olive oil in a non stick frying pan, cook chicken in batches, remove cooked chicken with slotted spoon before commencing the next batch. Set chicken aside and add 2nd tbsp of olive oil and fry the onions and peppers until softened. Remove from pan and set aside with chicken. Add the chopped chorizo to the pan and lightly fry off to release the fat. Remove with slotted spoon and set aside.
Clean the pan with kitchen paper and discard (the paper that is!). Add the chicken, onions, peppers and chorizo back into the pan along with 1tbsp of Blackened Cajun Chicken Spice - I use Schwartz.
Bring to the boil a large pan of water and add the pasta, once pan has returned to the boil time for 12 minutes. A few minutes before the end of the cooking time add the cream to the chicken and veg mix. I have put 200ml as a guideline, truth be told I don't measure it. How much you use depends on how much cream you want to coat the pasta.
