Little effot, big payoff!
Preheat oven to 375?. Pound chicken breasts as thin as possible, or buy already thin slices. Place a slice of ham on each breast, followed by a slice of cheese. Starting at narrowest side roll chicken with the ham and cheese neatly tucked inside, roll through melted butter then roll in bread crumbs before putting into baking dish. Wash hands if need be, then repeat with remaining rolls, adding more bread crumbs as needed. When all the rolls are assembled, drizzle remaining butter over all rolls, followed with remaining bread crumbs. Place into hot oven for about 1 hour. Top should be a beautiful golden brown!
Notes: This dish is rather messy, yet easy to make! Often we will double the recipe, making two dishes; one for cooking and one to freeze and eat later. If you choose the later, bring to room temperature before cooking; very important if storing in a glass container! For a little flare during the holidays, we will add freh spinach leaves between the ham and cheese layers!
