Set roast in roasting pan fat side up. Make 12 shallow slits in fat and insert bay leaves. Rub vodka, salt and pepper all over roast. (May want to add the bay leaves last). ( try adding garlic too) Let stand at room temperature for 2 hours. In a 425 degree oven roast the meat in the lower third of the oven for 30 minutes. Reduce temperature to 325 degrees and continue to roast for 1 3/4 hour longer. Check the temperature in the thickest part of the meat- 120 degrees for rare to med. When desired temperature is reached transfer to a cutting board and cover with foil and let rest 30 minutes.(may cook more during this time) Carve and enjoy. Make sure you have a good meat thermometer.
