Ready in 45 minutes

This is a family friendly recipe. It goes very well with rice. I would recommend Spanish rice.


1 can whole green chiles; drained
Cooking spray
1 pound ground turkey breast
1 cup onion; chopped
2 teaspoons chili powder
0.5 teaspoon cumin; ground
0.25 teaspoon Salt
2 cloves garlic; minced
1 can tomatoes and green chiles; diced
2 cups frozen whole-kernel corn; thawed
1 can fat-free refried beans
1.5 cups cheddar cheese; (6 ounces) shredded
1 cup tomato; chopped
0.5 cup Green Onions; chopped

Preheat oven to 375?.

Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square baking dish coated with cooking spray.

Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey, onion, chili powder, cumin, salt, and garlic; saute 5 minutes, stirring to crumble. Add diced tomatoes; cook 5 minutes or until liquid evaporates.

Spoon turkey mixture over chiles. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375? for 30 minutes. Let stand 5 minutes; top with chopped tomato and green onions.

I calculate this to 8 points. I used chopped up chiles at the bottom instead of whole chiles. Very hot and it took 8 chiles to cover the top of the pan. In hinted sight, i think I would chop up one or 2 chiles and add them to the swimming pot next time. Very delicious and recommended.
