Season lamb shanks with Egyptian lovers spice blend.
Add vegetables to roasting pan and place the lamb shanks on top.
Mix the tomato paste and chicken stock and parsley together, to incorporate the tomato paste.
Add the chicken stock/tomato paste mixture and the canned tomatoes to the roasting pan.
Cover the roasting pan with parchment paper.
Braise on 350 F for 2-3 hrs.
When shanks are cooked through but NOT falling off the bone, transfer from roasting pan to hotel pans.
The sauce can be pureed in the vita-mix of left chunky.
Cover the lamb shanks with the sauce and refrigerate.
