Yummy lamb mince souvlaki
Soak 6 bamboo skewers.
Place all of the Lamb Souvlaki ingredients in a bowl. Season very well with salt and pepper. Mix well with your hands and allow to chill for at least 1 hour. Divide the meat into 6 equal portions and form around the skewers.
Meanwhile make the Tzatziki sauce by mixing, yoghurt, cucumber, lemon, oil and salt together.
Next make the salad by combining the tomatoes, cucumbers, lettuce, mint leaves, roughly chopped, balsamic vinegar and olive oil.
Now place the lamb skewers on the BBQ and cook for 8-10 minutes until cooked through, turning frequently.
Place the pita breads on the BBQ for 1 minute on each side to warm up. Remove and wrap in foil. Now place the lamb skewers on the BBQ and cook for 8 minutes or to your liking. Turning the frequently.
To serve, place a lamb skewer in each warm pita topped with the tomato salad and finished with the Tzatziki sauce.
NOTES
You can mix it up a little by using chicken or beef.
