A teabread containing ginger, cinnamon and dried fruit.
Set oven at 325F/Gas Mk 3. Grease and line a 2lb loaf tin. Cream fat and sugar together (until light and fluffy) in a bowl, then add eggs, a little at a time.
Sift together, flour, spices and salt, and fold into the mixture. Then add the fruit and enough liquid to produce soft dropping consistency.
Turn the mixture into the loaf tin and smooth the top.
Bake for 20 minutes, then reduce the oven temperature to 300F (150C)/Gas Mk 2 for a further 40-50 minutes. (cover top if browning too quickly with kitchen foil.
Cool in the tin for 5 minutes, then turn out onto wire rack to finish cooling.
Serve sliced, plain or with butter.
