Easy soup for weeknights and tastes just like it's poplar Italian cousin!


Ingredients

Brown; Stir in
1 lb. Ground Italian sasuage
2 cups Onion; chopped
1 cup Carrot; diced
2 cups Button mushrooms; sliced
2 T Garlic; minced
Add; Stir in
4 cups Chicken broth
1 can Stewed tomatoes; Italian-style
1 cup Campenelle pasta
2 cups Spinach; chopped
Serve Soup Over; Garnish
1 cup Provolone or fresh mozzerella; diced
1/4 cup Parmesan cheese; shredded
4 t Basil; fresh, thinly sliced

Preparation

Brown sausage in a large saucepan over medium-high heat. Add onion and carrot: saute 3 minutes. Stir in mushrooms and garlic, and saute another 3 minutes.

Add broth and tomatoes: bring to a boil. Stir in pasta and simmer uncooked, about 10 minutes (or according to package directions). Add the spinach and cook about 1 minute, or until wilted.

To serve, place cubes of cheese in each serving bowl, then ladle over soup to melt. Garnish with Parmesan and basil.

This is a good recipe to start with but needs more seasonings. If you are comfortable adding seasoning to your taste then this is a good one. I'll make it again with some tweaks here and there.

made this last night with ground beef and beef stock was very yummy! added some extra seasoning and served with garlic bread,cant wait to try again!

Nice soup, but don't add the pasta to the soup or it will eventually break down into goo. I kept the pasta separate, put some into a bowl and ladled the soup over it. Also, the cubes of cheese melted just enough to make big balls of cheese, next time I'm going to shred it.

More of a pasta e fagoli. I made with Hamburg instead and added in an Italian spice blend
