Brown sausage in a large saucepan over medium-high heat. Add onion and carrot: saute 3 minutes. Stir in mushrooms and garlic, and saute another 3 minutes.
Add broth and tomatoes: bring to a boil. Stir in pasta and simmer uncooked, about 10 minutes (or according to package directions). Add the spinach and cook about 1 minute, or until wilted.
To serve, place cubes of cheese in each serving bowl, then ladle over soup to melt. Garnish with Parmesan and basil.

ltiff 4 months agoThis is a good recipe to start with but needs more seasonings. If you are comfortable adding seasoning to your taste then this is a good one. I'll make it again with some tweaks here and there.

Pithecanthropus 5 months agoNice soup, but don't add the pasta to the soup or it will eventually break down into goo. I kept the pasta separate, put some into a bowl and ladled the soup over it. Also, the cubes of cheese melted just enough to make big balls of cheese, next time I'm going to shred it.
