Easy soup for weeknights and tastes just like it's poplar Italian cousin!
Brown sausage in a large saucepan over medium-high heat. Add onion and carrot: saute 3 minutes. Stir in mushrooms and garlic, and saute another 3 minutes.
Add broth and tomatoes: bring to a boil. Stir in pasta and simmer uncooked, about 10 minutes (or according to package directions). Add the spinach and cook about 1 minute, or until wilted.
To serve, place cubes of cheese in each serving bowl, then ladle over soup to melt. Garnish with Parmesan and basil.
CheeseSammich 6m agoMade this for family get together. Everyone loved it. The only change was that I wasn't able to find Campenelle so I used Rotini instead. Still very delicious!
ltiff 1y agoThis is a good recipe to start with but needs more seasonings. If you are comfortable adding seasoning to your taste then this is a good one. I'll make it again with some tweaks here and there.
kandria 1y agomade this last night with ground beef and beef stock was very yummy! added some extra seasoning and served with garlic bread,cant wait to try again!

Pithecanthropus 1y agoNice soup, but don't add the pasta to the soup or it will eventually break down into goo. I kept the pasta separate, put some into a bowl and ladled the soup over it. Also, the cubes of cheese melted just enough to make big balls of cheese, next time I'm going to shred it.
