375 degrees
1. Brown meat slowly, drain off fat.
2. Add next six ingredients; simmer uncovered 30 minutes to blend flavors, stirring occasionally. Add a little water if too thick, but you want it pretty thick.
3. Cook noodles until tender; drain; rinse in cold water.
4. Combine: cottage cheese, beaten eggs, salt, pepper, parsley flakes and Parmesan cheese
Place 1/2 the noodles in 13x9x2 baking dish; spread 1/2 the cottage cheese mixture over; add 1/2 the mozzarella cheese; and 1/2 the meat sauce. Repeat layers.
Bake at 375 degrees for 30 minutes (or longer if you have refrigerated this) until bubbly.
Let stand 10-15 minutes before cutting so filling is slightly set.
If frozen, defrost in refrigerator over night before baking.
