This is easy to make and great comfort food. Make extra and freeze some. Also dont worry measuring amounts exactly, alter it to your tastes.
Ragu:
Fry the onion and garlic till soft, not brown (in cooking oil is fine).
Add minced beef and brown all over.
Add tinned tomatoes and tomato paste as well as the beef stock (in ¼ or ½ pint water), wine, basil, oregano and bay leaf. Stir thoroughly, cover and simmer for at least 30 mins. Stirring regularly.
If it tastes a little sharp add 1 or 2 teaspoons of sugar, then add lemon juice to taste.
Now turn oven on to 220oC.
White Sauce:
Melt the butter in a saucepan over a low heat and stir in the flour until you have a smooth paste. (a Roux).
Remove from heat and stir in milk.
Place back on hob and increase heat until simmering and thickened whilst stirring CONSTANTLY!
Add small amount of salt and pepper and the nutmeg, add a dash of lemon juice as well.
Simmer for 20 mins or so but keep stirring often.
Back to the Ragu. If it is watery leave the lid off to thicken the sauce.
Assembly:
Half Ragu at bottom of dish, cover with half the white sauce, layer lasagne sheets on top.
Then the rest of ragu on the sheets, another layer of sheets and white sauce on top this time.
Cover with grated cheese and dust with paprika.
Place in oven for 15-25 mins till golden brown and bubbling.
