"Very tasty and easy. I cut the recipe in half, but only used 3 tortillas to layer the bottom of a 8x8 dish. I used Morning Star meal starter instead of beef or turkey because i had it in the freezer and it's super quick to heat up (no defrosting or browning). I topped the casserole with some spring salad mix and tomatoes. Next time, I will definitely add a layer of low fat refried beans; it would make this dish to die for. Also, maybe add some veggies in there, maybe some corn or even squashes..."
Preheat oven to 350 degrees.
Lightly coat a 13 x 9 x 2 baking pan with nonstick cooking spray; set aside.
In large skillet cook meat until brown. Drain fat. Stir in water, taco seasoning and garlic powder. Bring to a boil; reduce heat. Simmer, uncovered, about 5 minutes or to desired consistency; set aside.
In mixing bowl combine cottage cheese, cheddar cheese and onion.
Place 6 tortillas in prepared pan. Top with half of the meat and dollop with half of the cheese mixture. Repeat layers. Bake, uncovered for 40 to 45 minutes or until heated through.
Top with lettuce and tomatoes. Serve with sour cream, if desired.

jenlormer 1 year agovery good flavor. I didn't think cottage cheese would be good in tacos, but it added a nice touch. It was a little dry so next time I make I plan to add some rotel to give it some moisture and spice.

MsNashay 1 year agoDelicious but I added some onions, green peppers, and seasonings to the meat, and flour tortillas based on other reviews. It was a hit!

dgmacintyre 2 years agoI used flour tortillas instead of corn. I also used 2lbs of taco meat, I didn't think 1lb was enough.
