Suggest a better descriptionChop onion and healthy sauté in bottom of soup pan until translucent. Add peas and water and bring to a boil. Reduce heat and add garlic, basil and salt; simmer for 10 minutes. Take hand-held blender to blend peas leaving some peas intact. Add plant milk until warmed, an additional 5 minutes. Add freshly ground black pepper and serve.
The lean protein and fiber of the peas mixed with the creaminess of plant milk is really nice. The hints of basil and garlic do not overpower the natural yumminess and sweetness of the peas. Peas offer tons of fiber, b vitamins and protein without any saturated fats. Legumes, including peas, are some of the leanest proteins you can find with fabulous fiber and healthy phytochemicals.
Super easy to make using frozen peas, but could also be made with fabulous, fresh garden peas.
So all I am saying is give peas a chance!
