Suggest a better descriptionHeat oil in a large saucepan over medium heat. Add onion and cook until soft. Add mince, grated carrot, capsicum, mushrooms, zucchini & celery. Cook, stirring constantly, until browned. Season with pepper. Add passata, tinned tomatoes, beef stock, tomato paste, garlic and herbs and simmer gently, uncovered, for 20 to 30 minutes, stirring every 2 or 3 minutes.
Meanwhile, preheat oven to 200 degrees Celsius. Lightly grease a 6cm deep, 26cmx32cm baking dish. Combine cottage cheese and ricotta in a bowl. Pour 1 cup meat sauce into base of baking dish. Top with 1 layer of pasta sheets. Spread with 1/4 of cottage cheese mixture and sprinkle with 1/4 of grated cheese. Repeat to make 4 layers, finishing with grated cheese.
Cover baking dish with foil. Place in oven and cook for 30 mins. Remove foil and cook for a further 5 minutes until cheese has browned slightly. Allow to stand for 10 minutes before serving.
