Butter an 8-by-8-by-2-inch pan (can be metal) and set aside
Place pecans in a 10-inch glass pie plate.
Stirring after each 2 minutes, microwave on high 8 minutes or until
pecans are roasted. Set aside.
Place margarine in a 2-quart glass measure or round heat-proof
glass casserole. (Note: Only use heat-proof glass such as Pyrex.
This candy mixture gets very hot.)
Microwave on high 1 minute or until melted.
Stir in sugar and milk.
Stirring after each 2 minutes, microwave on high 7 to 8 minutes.
Using a wooden spoon, beat until mixture begins to stiffen.
Add vanilla and roasted pecans.
Pour into prepared pan. Let cool completely before cutting.
The first day you make it, it will be kind of like a caramel.
Put it back for a day or two and the texture changes.
Cut into 36 squares.
