Under medium-high heat, put 2tbsp of butter in an 8 inches pan. Put the leek in the pan and cook until lightly brown. Put aside.
In the same pan, put 1tbsp of butter and let it melt under medium-high heat. When the butter is melted, put the eggs mixture in the pan. Turn over the omelette when the sides are brown.
When turned over, put half the leek on one side of the omelette. Put the goat cheese on top and fold in half..
Repeat to make the other portion. Bon appétit!
