1 c Bell peppers -- chopped
1 ts Salt
15 1/2 oz Great northern beans --
16 oz Dark red kidney beans --
2 Cloves garlic -- minced
Cooked and cubed
1 1/2 ts Cumin
1/2 ts Black pepper
16 oz Pumpkin
Drained and washed
14 1/2 oz Chicken broth
14 1/2 oz Crushed tomatoes --
2 1/2 c Turkey light meat, skinless
1 1/2 ts Oregano
1 1/2 ts Chili powder
1/2 c Water
Drained and washed

Original recipe makes 10 Servings



Heat oil in a saucepan over medium heat. Add onions, garlic, bell peppers, oregano, cumin, chili powder, salt, and black pepper; cook until vegetables are tender. Stir in chicken broth, beans, tomatoes, pumpkin, turkey, and water. Bring to a boil, stirring occasionally. Simmer 45 minutes over low heat. Recipe By : Anita A. I was looking for a way to use leftover turkey and was so glad to find a recipe with ingredients that I already had on hand. This is a very healthy recipe- it fit very well with the diet I am following. My husband and I both liked it a lot.
