A fresh side salad that works with steak, schnitzel or a baked potato for an easy vegetarian option.
Mix lemon juice, olive oil & balsamic reduction in a bowl. Chop onion into 1/4 round semi-circles, dice the tomato & avocado then add these to the bowl. Stir & season with salt & pepper. Add lettuce & toss.
Works best with a soft, green lettuce or with spinnach mix. Can use a white onion if preferred.
