A very tasty cheesecake treat perfect for summer, because it's sweet and fresh.
Preheat oven to 350 degrees.
Line 13x9-inch pan with foil, with ends of foil extending over the sides.
Melt butter, then add entire box of cake mix, 1 egg and tbsp. of lemon juice and beat with a mixer until well blended. Press 2/3 of the mxture onto the bottom of the prepared pan, put other 1/3 aside.
Beat the cream cheese (can be low or non-fat if you want) and sugar with mixer until well blended. Add remaining 1 egg and 2 tbsp's of lemon juice, and the lemon zest. Mix well. Pour over the cake crust and top with blueberries. Pinch small pieces of the remaining cake mix mixture between your fingers; press lightly into the the cream cheese layer.
Bake for 48-50 minutes, until the centre is set. Let it cool completely! Refrigerate for 1 hour, then use the foil handles to lift it from the pan before cutting into squares.
I have used frozen blueberries for the times I've made it, just putting them in a colander and rinsing them until they defrosted. The 2 cups is just a suggestion for them too, if you want to add more or less.
Make sure it cools completely before putting it in the fridge or else you'll end up shattering the still-hot glass pan (like my husband did). They taste much better cold than warm.
I know it seems like a lot of lemon, but the blueberries and sugar offset it. For the zest I just used my cheese grater on the small-grind side. Remember you just want the peel and not the white stuff underneath!
