A simple marinade adds pleasing additional flavours to the chicken breasts while the addition of broccoli, asparagus, baked sweet potato and carrots create a delicious and healthy meal.
In a large bowl mix lemon juice, olive oil, oregano, salt and pepper.
add chicken breasts and marinate for up to 2 hours in refrigerator.
Heat oven to 350. Remove chicken from marinade and sear in a large skillet over medium-high heat for 3-4 minutes each side.
Keep chicken in frying pan or place in baking dish and top each breast with 2 tbs of feta and 1tsp of scallions.
Bake for 30-35 minutes.
