Lemon-garlic Shrimp Skewers

You can make this ahead of time through step 2 up to one day ahead; cover and chill. Easy recipe for when you have guests


2 tablespoons kosher salt
2 tablespoons sugar
2 pounds shrimp; (up to 2.5 lbs), peeled
1/4 cup olive oil
1/4 cup parsley; chopped
1 tablespoons lemon peel; grated
2 cloves garlic; (up to 3)
1/2 teaspoon fresh ground pepper; 1/2 teaspoon fresh-ground pepper
lemon; wedged

Original recipe makes 6 Servings



1. In a bowl, mix salt and sugar. Add shrimp and stir gently to coat. Cover and chill 45 minutes to 1 hour. Rinse shrimp well and drain; also rinse and dry bowl.

2. Return shrimp to bowl. Add olive oil, parsley, lemon peel, garlic, and pepper. Mix to coat. Thread shrimp on metal or soaked wooden skewers, running skewer through the body once near the tail and once near the head end of each shrimp so it looks like the letter C.

3. Lay shrimp skewers on an oiled barbecue grill over hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Cook, turning once, until shrimp are bright pink and opaque but still moist-looking in center of thickest part (cut to test), 5 to 6 minutes total. Serve with lemon wedges to squeeze over shrimp.

OK.... I originally posted this recipe ages ago.... I made this again tonight.... LOVE this recipe. But was reminded that your really need to rinse the shrimp REALLY well after the salt/sugar soak or your shrimp dish is too salty. Also this time I added some crushed red pepper for extra kick! Still love this recipe!

This is the very first recipe I have tried on Big Oven and my very first review. It was terrific! We made it as a main course and it was a big hit..easy and delicious...I plan on making it as an appetizer this Friday night for company. The gas grill worked great. I did chop the garlic quite fine.
