Poke several holes in the lemon with a fork. Insert the lemon in to the chicken cavity, place chicken breast side down in crockpot. Mix together the honey and juice. This works better if you slightly warm the honey first. Pour the honey mixture over the chicken. Crockpot on low overnight or 6-8 hours.
