Ingredients

2 ts Baking Powder
1 c Skim milk
7 1/3 tb Sugar
1/4 ts Salt
1 tb Fresh Lemon Juice
1 3/4 c All-purpose flour
1 tb Lemon Rind; grated
3 tb Vegetable oil
Vegetable cooking spray
5 ts Poppy seeds
1 Egg; lightly beaten

Servings  

Preparation

Combine first 5 ingredients in a large bowl; make a well in the center of mixture. Combine milk and next 4 ingredients; stir well. Add to dry ingredients, stirring just until moistened. Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 deg for 25 minutes or until golden. Remove from pans immediately; let cool on a wire rack. Yield: 1 dozen (serving size: 1 muffin). Didn't work out. They were quite dense and not enough lemon flavour

This recipe worked extremely well,I also added extra lemon and poppy seeds and topped it with a lemon glaze! Yum!

But if I made it again i would add more lemon and poppy seeds. It was not very lemony.
