Pre-heat oven to gass mark 3, 325? , 170 c
Line 2 7'''' sponge tins with greaseproof paper
Take a large roomy mixing bowl and sift flour and baking powder into it, holding the sive high to give the floor a good airing. Then simply add all the other ingredients tothe bowl and whisk thempreferably with an electric mixer - tillthoroughly combined. If the mixture doesn''t drop off a wodden spoon spoon easily when tappet on the sideof the bowl, then add 1 or 2 teaspoons of tap-warm water and whisk again.
Now divide the mixture between the two prepared tins,level off and bake on the centre shelf of the oven for 30 minutes. When cooked leave them in the tins for 30 seconds, then loosen the edges by sliding a palett knife all round and turn them out a wire cooling rack. Peel off the base papers carefully and when cool sandwichthe cakes together lemon curde or lemmon butter icing dust with icing sugar
Lemon Butter Icing
Place soft butter, icing sugar, lemon juice and lemon rind into a electric mixer, mix well together
place 1/2 the icing between the sandwich and the rest on top of the cake
You may replace the lemon ingredients with coffee to make a realy nice coffee cake
