Ready in 45 minutes
This is a family favorite.
Preheat oven to 350. combine flour, oats, soda, cinnamon, and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin mixing well after each addition. Stir in chocolate chips. For each cookie , drop 1/4 cup dough onto lightly greased cookie sheet; more dough to form stem. Bake 350. 20-25 minutes, until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks. Decorate using icing or nuts. Yields about 32 cookies. Variation substitute 1 cup of raisins for cholate chips.

megbomb 4y agoi make this w/o oats and w/ white choc chips. Family favorite, nice and soft, cake like cookies.
magnus777 5y agoNot that good. I've had better. It would have been marginally better sans oats.
pineapplebutter 6y agoVery nice. I added nutmeg, ground cloves, and ground ginger to the mix. I also replaced the butter with margarine and substituted 1/2 up unsweetened applesauce for 1/2 cup margarine. They came out very cake like and soft. They were enjoyed all around. :)
