Pork/chicken/cow meatballs, with parsley, onion, and home made tomato sauce
1) Chopp 2 onions into small pieces, put them in a pot with 2 tablespoons of Olive Oil or Sunflower oil.
Add half cup of water and let it cook in LOW FIRE while you prepare the rest of the meal.
2) MARINATE THE MEAT -Put the smashed meat in a bowl, add some salt, pepper, the egg, the parsley , the rest of the chopped onion, the chopped red pepper and the garlic. Mix everything by hand or in a blender. (You can add some cheese if you wish to). Add the cup of wine/beer, this will make the meatballs really tasty!
Now that the meat is prepared, you need to start cooking the sauce!
3) SAUCE- Cut the 2 big tomatoes in small pieces, add it to the pot where your onion is being cooked. Add the tomato paste and the rest of the water. Mix it. Add the oregano, or some herbs that you would prefer instead, like rosemary, mint or whatever you prefer.
Let this mix cook while you trasform the meat preparation into small meatballs.
When the meatballs are done, let them "rest" for a bit. The sauce already cooked for a while, so now you need to use a blender and blend all the ingredients in the sauce. In the end of it, you can add 2 tablespoons of white wine to the sauce.
3) ADD MEATBALLS TO THE SAUCE- Put the meatballs in the sauce and let it boil for 20 min in a low fire.
This recipe is light because only a small amount of oil is used, there is basically only tomato, water and meat and if you eat it along with a salad it is a great and healthy lunch/dinner.

Just be sure that you pay attention to the sauce while it's cooking, dont let it burn. After the onion is boiling (step number 1) put the fire low. If you cook food in a low fire for a longer period of time, the food will be tastier.
