In a skillet add olive oil and shallot and saute until tender over medium heat (5-8 minutes)
Add chicken livers
Add garlic, thyme nutmeg, sage, salt & pepper, zest
Continue to cook until liver is done 12-16 minutes
Add cognac, butter and capers and cook down over high heat (2-3 minutes). Remove from heat
Add cream cheese and mix, then transfer to food processor (or blender) for smooth texture
Refrigerate min 1 hour before serving
