The perfect basic lo-mein recipe. Add or change add-ins according to what you have, and what you want. Use any noodle you like, from ramen, to Asian, to spaghetti.

Ingredients

0.25 cup chicken broth
1/4 cup Soy sauce
2 teaspoons rice wine vinegar
2 teaspoons sesame oil
1 teaspoon red pepper flakes
1 teaspoon sugar
8 oz. noodles
2 tablespoons oil
6 oz meat
8 oz vegetables
0.25 onion; (up to 1/2), chopped
2 teaspoons garlic
1 teaspoons ginger
1 tablespoons Soy sauce

Original recipe makes 2 Servings

Preparation

Combine For Sauce:

1/4 cup of chicken broth

1/4 cup of soy sauce

2 teaspoons rice wine vinegar

2 teaspoons sesame oil

1 teaspoon red pepper flakes

1 teaspoon sugar

Cook:

8 oz. cooked noodles

Sautee:

in 2-4 tablespoons vegetable, peanut, or stir-fry oil, cook:

6 oz meat

8 oz vegetables - whatever you have on hand and/or want to throw in: scallion, water chestnut, mushrooms, or other stir-fri veggies. Napa would be ideal.

also add chopped onion

2-3 teaspoons garlic - we use the kind in the jar

1 1/2 teaspoons ginger - we use the dry powdered kind

1-2 tablespoons soy sauce

add cooked noodles

and sauce

mix well. And you're done.

This was very good, not really Lo Mein as I'm used to having, but the sauce is very tasty nonetheless. I doubled the recipe and my wife found it to be quite spicy so next time I'll either keep the red pepper flake at a tsp. or omit it all together. Used frozen pea pods, broccoli and edamame for the veggies.

Everyone loved it. I did a little bit more than a teaspoon, added a little more soy and seasoned my meat just a little.

Really good, really easy, can easily be used with any meat. (We used steamed fish cake.) My husband and I both liked, along with my 5 year old and 2 year old. What could be better than that?
