This casserole tastes like a loaded twice baked potato in every bite. It is always a favorite for get togethers and serves about 10-12.
1. Peel and cube the potato. I use 5 extra large potato that are approximately one pound each.
2. Put the cubed potato in a large pot and cover with water. Boil until the potato is tender. Drain.
3, Using a hand mixer or masher, mash the potato until smooth.
4. Add butter, garlic, 3/4 of the grated Colby jack cheese, heavy cream, sour cream, cream cheese, salt, pepper, 1/2 of the green onion and 1/2 of the bacon and mix well.
5. You can either finish cooking in your large pot that you cooked the potato in, or add mixture into a crock pot. Either way, heat on low just to keep warm until serving. Top with the remaining cheese, onion and bacon, and cover. Heat until warm throughout and top cheese is melted.
Serve warm.
