This uses my favorite mayonnaise Dukes which can only be purchased in the South. But you can use your favorite brand. Just remember that Miracle whip is not mayonnaise!
boil potatoes in slightly salted water for about 20 minutes until fork tender in thickest part
in a large bowl Mix ranch with sour cream and mayo and refrigerate.
When potatoes are al dente, remove from heat and drain,.
place drained potatoes in bowl with ranch mixture and carefully turn to coat.
sprinkle bacon bits, green onion and cheese over the top and gently combine through the entire mixture.
serve slightly warm or chill for later.
Valerie411 2y agoVery good change from the normal potato salad! Added hard boiled eggs and gave a good extra taste.

iamtheswarm 3y agoDecent salad. I added 1/2 cup of celery to add a lil texture and it turned out great. And I cut the ranch mix in half.
michellebolhuis 3y agoMade it just the way it was posted. My husband commented three different times how much he liked it. Good alternative to potato salad which is not my favorite.
lrowe34 3y agoGreat Recipe. I had never made potato salad. Very easy to follow. Only Change, used 1 1/2 tablespoons of ranch dressing, as suggested in the reviews. Next time I will have to double the recipe. It was gone in a hurry and everyone wanted more. This will be my go to Potato Salad recipe.
tlbarker72 3y agoThis salad is DELICIOUS. I made only a few necessary changes. I didn't have mayonnaise so I used miracle whip. I don't care for bacon bits, so I fried up a few slices of real bacon. And as some other reviewers suggested, I cut back the ranch dressing mix to a tablespoon and a half. I am not a big fan of traditional potato salad, and this recipe is now my favorite. Creamy and flavorful. I don't know that I will ever use my other recipes again. :)
