Low fat creamy cucumber salad

Easy and quick to prepare!! Very refreshing for summer days!!


1 large Cucumber; seeded, peeled & thinly sliced
pinch Salt; to taste
1/2 teaspoon Pepper
3 tblspoons Parsley; minced
1 tablespoon olive oil
3 tblspoons Vinegar
3 tblspoons Reduced Fat Sour cream

Original recipe makes 6



In a salad bowl, sprinkle salt, pepper, olive oil and vinegar to sliced cucumber.

Add minced parsley, mix well

Add Reduced Fat Sour Cream, mix carefully

Chill in refrigerator before serving

Note: Sour cream can be substituted by Fat Free yogurt.

The vinegar to sour cream ratio was a little too high, making it too tart. Otherwise pretty good.

Easy and fresh. I used baby cucumbers instead of the large. Everyone asked where I bought the salad, no one believed I had made it myself!
