Top-ranked recipe named "Low-fat High Fiber Blueberry Bran Muffins"
I found this recipe on another recipe website and I couldn't believe how good these are considering how healthy they are. They came out very moist and full of flavor.
"What a wonderful healthy muffin! Since I had no oat bran I ground some oatmeal and used it instead. Also substituted Apple's and blackberries and we loved it! Thank you so much I will be making this for a brunch soon."
Preheat oven to 375 degrees.
Grease muffin cups or use paper muffin liners.
Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
Beat in bran mixture.
Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
Stir into bran mixture until just blended. Fold in blueberries.
Scoop into muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

heyyyvic 1 year agoI made my own errors making these muffins, but just bit into one this morning and it was pretty good. Muffins are harder to make than cupcakes lol.

sarahhofforth 2 years agoThese turned out wonderful. I stuck to the recipe and cooked them for a full 20min so they were not underdone. Wheat bran and Grape nut cereal are not interchangeable in regards to previous comment.

kelleyday 2 years agoThese are delicious. I used frozen blueberries and it wasnt too moist like the previous rating. Cooked for 16 mins.

Lafoley83 2 years agoI made them and they turned out great! One question though, they were so moist they were almost wet and I think it might have something to do with the blueberries? I'd like to make them again but would like them to be a bit more dry next time. Suggestions?
