Cook Noodles. While noodles are cooking, mix the chicken breast bread crumbs chopped onion and one bag of mozzarella cheese in a bowl. Add egg better and get a good consistency. Make into meatballs and place for 5 minutes in the microwave. Check after 5 minutes and turn. Cook another 3 – 5 minutes.
While Noodles and Meatballs are cooking, in a bowl mix the following ingredients. Fat Free Ricotta cheese, Egg Beater, Parsley, Salt, 1 bag of Mozzarella cheese, onion powder, garlic powder, Italian seasonings, fennel seeds and oregano.
When Meatballs are cooked cut into slices and set aside. Finish cooking noodles and cool. Place a noodle on the counter and add cheese mixture and meatball slices then roll. Place in a pan and top with sauce and mozzarella cheese.
