Great recipe! You will never know it's low-fat.
In a sauce pan, brown the italian susage and drain fat. Add onion, garlic, diced tomatoes, tomato paste, basil, oregano, sugar and pepper. Simmer for 30 minutes.
In the meantime, combine cottage cheese, parmesan cheese and set aside.
Cook lasagna noodles and drain.
Preheat the oven to 350?
In a 9x13 or 8x12 (thicker), put a thick layer of meat sauce on the bottom, layer as follows:
1/2 the lasagna noodles
1/3 cup mozzarella cheese
sauce
rest of the lasagna noodles
rest of sause
rest of mozzarella cheese
Bake for 45 minutes. Let stand for 15 minutes and serve.
