This is a great chicken for tacos, burritos and salads. Made with boneless skinless chicken breast, its also low in fat!
1. Boil enough water in a pot to cover chicken. Add a little salt to water and add chicken breast. Cook for about 25-35 minutes or until chicken is cooked through. Drain and let chicken cool. After chicken has cooled, shred chicken.
2. Add oil to pan. Brown onions and garlic. Add shredded chicken breast to pan and cook for 5 minutes on high.
3. Add chicken broth, tomatoes, chili powder and salt. Let stew for about 30 minutes on low heat. Serve on tacos, burritos, enchiladas, salads, etc. refrigerate leftovers for alternate uses for up to 5 days! Enjoy!
