This is a modern twist on my grandmother's sweet potato biscuit recipe made a bit healthier and easy to make for the modern age.
1. Drain sweet potatoes. Mash thoroughly.
2. Add applesauce, splenda, and baking powder. Mix.
3. Slowly knead in the flour. (Additional flour may be required to achieve proper biscuit dough consistency depending on amount of liquid in potatoes.)
4. Bake at 450 for 8 minutes. Flip and cook for an additional 8 minutes or until biscuits just begin to brown.
