1/2 lb Lox or smoked salmon;
1/4 c Unsalted butter
8 Eggs; beaten just to combine
1 1/3 c Onions; minced

Prep: 5 min, Cook: 5 min. Melt butter in a heavy nonstick skillet over low heat. saute onions 3-4 minutes until very soft but not brown. Stir in lox and cook 1-2 minutes. Add eggs. Turn heat to very low and gently stir until eggs are set. Serve immediately. This recipe serves 4 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 1.The instructions describe how to prepare the ingredients for one pan. This was a quick and simple treat to make for me and mine! We really enjoyed the tart, salty flavors and serving it over buttered bread slices was simply delightful. I wil be making this often! A+

I've always liked lox and cream cheese. This is a good recipe for a super scrambled egg variation. It is a quick recipe. I halved it as I was only feeding two.
