Preheat oven to 400? Bake chicken breast to 170? internal tempature (about 30 min.). Remove chicken and reduce heat to 350?. Cut chicken. onion and bell pepper into 1 - 1 1/2" peices; place in small baking pan (11x7 or 8x8) along with pineapple.
In large skillet combine pineapple juice, brown sugar, ketchup, ginger, garlic salt, salt, cornstarch, and soy sauce; simmer over low heat 5 minutes or until slightly thickened. Pour over and mix slightly with chicken mixture.
Cover pan with aluminum foil and bake for 1 hour.
