Ready in 45 minutes

For the big kid in us, mac and cheese never gets old. Add some taco makings, and boxed mac and cheese becomes a magic dish for spicy food lovers.

1 lb hamburg or ground beef
1 green pepper; chopped
0.25 cup onion; minced
3 cloves garlic; minced
1 cup chunky salsa; (hotter the better!)
2 packages macaroni and cheese dinner mix
2 cups tortilla chips; crushed
1 cup Monteray Jack cheese
1.5 cups milk
0.25 cup Butter
1 can black olives; sliced

Original recipe makes 8

Prepare the macaroni and cheese according to directions on the package. While cooking, butter a fry pan and brown minced onion and minced garlic. Stir in hamburg and cook until no longer red. Drain, and set back on the stove and add the salsa and green pepper. Mix in until warm, and set aside. Drain cooked pasta and add cheese packet(s) contents along with milk and mix.

Preheat the oven to 325 degrees.

Spread mixed macaroni and cheese into a baking dish, adding a layer of the hamburg mixture, crushed tortilla chips, and layer the top with a healthy sprinkling of cheese with olives (picture not prepared with olives). Bake for 15-20 minutes in the oven until cheese melts and food thoroughly heated through.

I took another cook's advice and added taco seasoning to the meat to give the dish some more kick. The casserole is good, though it makes a lot. It took my family of four several days to finish it, and we were getting tired of it after the third serving. I suggest halving the recipe if your kids are younger and you don't want tons of leftovers.

I have been making something like this for years I do it different. Always use taco seasoning for meat, velveta shells and cheese, tomato sauce, and nacho cheese Doritos. Cover it with cheese and bake. The whole family loves Iit

Tasted like Hamburger Helper. I added the taco seasoning to the meat like one user suggested.
