A kid-friendly favorite.
Preheat oven to 350 degrees. Drain pasta once cooked and toss with a little olive oil. In medium nonstick pan, whisk milk and cornstarch. Bring to boil. Stir in mustard, pepper, and salt. Simmer until thickened. Stir in cheddar until melted. Fold in macaroni. Butter two muffin pans and coat with breadcrumbs. Shake off excess. Fold in chives. Spoon into pans and top with breadcrumbs. Bake until golden brown, 15-25 minutes.
