This is a twist on the traditional Mac N Cheese with protein on Chicken added. My whole family love it! It is just a delicious without the chicken and could be served as a side dish.
Preheat the oven to 350 degrees.
Cook pasta according to the package, reserving 1 cup of hot boiling water.
In the hot pot combine and stir the cooked and drained pasta with Alfredo sauce, chicken & tomatoes. Stir in the hot water and cheese - reserving some for the top. Spray a 13x9 pan with cooking spray and pour the mixture into the pan. Sprinkle with reserved cheese.
In a separate bowl combine the bread crumbs and oil. Mix until fully combined. Sprinkle over pasta mix.
Bake for 40-45 minutes - until the sauce is boiling.
