This is a conglamoration of mac and cheese recipes I've found. Just you basic cheesy noodley goodness. Solid comfort food. yum.
Instructions
Preheat oven to 350 degrees F. In a large pot of boiling, salted water cook the pasta to al dente.
While macaroni is cooking, melt butter in a heavy-bottomed 3-quart saucepan over low heat. Whisk in flour, salt, pepper, mustard, cayenne and Worcestershire sauce. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil for 1 minute, stirring constantly; remove from heat. Stir in cheese and cook, stirring occasionally, until cheese is melted.
Drain macaroni and gently stir into cheese sauce. Pour into ungreased 2-quart casserole. Bake uncovered until bubbly, about 25 to 30 minutes. Remove from oven and rest for five minutes before serving.
August, 2010 Excellent recipe - next time use heaping cups of noodles instead of level, was a little too saucey.
September, 2010 Note for others, I substitute a splash of soy sauce for the worscheshire but only to make it a vegetarian dish - so have not changed the master recipe. I usually broil for the last 3 minutes or so to assure that nice cheesy crust on top!
October, 2010 - - Best ever! Came out super creamy and smooth - cooked the roux a little longer, think that's maybe why.
November, 2012 - soy sauce is no substitute for worsch. Have started usoing Damian's butt rub instead of cayenne. Double this recipe. One to eat. One to freeze.
2014 - I have made a lot of variations on this recipe over the years but the base recipe remains the same. Since I tend to use whatever cheeses need to be used up, it's a little different each time I make it. Also, have had great success adding in some chopped ham or lump crab meat. Always a favorite.
