1. Butter a 9x13 square pan.
2. Drop the macaroni in a pot of boiling water.
3. While it is cooking begin the cheese sauce. Melt the butter in a medium sauce pan. Add the flour and stir well until it turns nutty brown. Slowly add the milk, whisking all the while to get a smooth sauce. Wait until it is boiling, then gradually add the grated cheese. Add more cheese depending on your taste. Add salt and pepper to taste.
4. Remove the sauce from the heat. Once the pasta is done, drain it well and mix it with the cheese sauce. If you want, you can add some ham or proscuitto at this time. Sprinkle some additional cheese on top if you wish. Bake at 375? about 30 minutes until bubbly.
