This is very good with breakfast, similar to hash brown potatoes. Bake an extra potato or two one evening with dinner and refrigerate the leftovers to make this for breakfast on another day or with an evening meal. These are also very good wrapped in heated flour tortillas with some cheese and salsa.
Begin heating the butter on medium heat in a skillet while you''re cubing the potato. When the butter is melted, add the potato, onion, salt, and pepper and cook until slightly browned, turning the potatoes occassionally. If the pan gets too dry, add a little more butter. When they are done, transfer them to a plate lined with a paper towel to absorb the excess grease. Salt and pepper them again to taste, if desired.
